Chemical properties:
Colorless liquid. Melting point -51℃, boiling point 92-93℃, relative density (20/20℃) 0.785, refractive index (nD20) 1.3902. Miscible with ethanol and ether, slightly soluble in water.
Uses:
1. Isovaleraldehyde naturally exists in essential oils such as citrus and lemon. It has an apple-like aroma when highly diluted, and a peach aroma when the concentration is less than 10ppm. It is a permitted edible flavoring in my country’s GB2760-86, and is mainly used to prepare various fruit-type flavors. This product is an intermediate of the drug antispasmodic agent syndecan.
2. Chemical raw materials, also used as rubber accelerators and food flavorings.
